INGREDIENTS TO BE USED

All you need is :-

  • Full fat milk
  • An acidic agent: lemon juice, yogurt, or vinegar.

WHICH ACIDIC AGENT TO BE USED ?

  • There arethree different acidic agents for making paneer:-lime juice vinegar yogurt (curds).
  • Adding vinegar will give you a firm block of paneer.
  • Lime juice and yogurt will give you softer&creamier paneer.

STEPS FOR MAKING :-

1 . CURDLING OF MILK

Start by boiling milk, and add a tablespoon of lemon juice or vinegar to it. If using yogurt, I recommend you to add 1/2 cup yogurt to the milk. I usually prefer using yogurt because paneer is creamier, and more fresh-tasting awesome.

2 .SEPARATE CHEESE CURD FROM WHEY

Once the milk starts separating, simmer it for a minute or t you’ll see it will split completely between whey and cheese curds. Switch off the flame, to make sure the paneer doesn’t overcook. You are done!

3. STRAIN

The next step is to keep the strainer with the muslin cloth and strain the paneer. keep another container below the strainer to collect the whey. Don’t throw it because it’s full of nutrients and perfect for kneading into dough.

Once you all done with straining, just fold the edges of the cloth and place a heavy object on top of it for 10-15 minutes. This will really help to shape the paneer and set it into a block that you can slice into in perfect paneer tikkas.
